Recipe: Orange Mascarpone Ciambella Cake

Slightly sweet and crumbly, this flavorful cake can be served at breakfast, or for dessert.

3 cups all-purpose  (mild-flavored)1 tablespoon orange zest (from one large orange)½ cup orange juice (from one large orange)2 teaspoons vanilla¼ cup candied orange peel (like Paradise)

Ingredients

3 cups all purpose flour1 tablespoon baking powder½ teaspoon salt4 large eggs, separated1 cup sugar1 8 ounce container mascarpone cheese, room temperature (one cup)½ cup extra virgin olive oil (mild flavored)1 tablespoon orange zest (from one large orange)½ cup orange juice (from one large orange)2 teaspoons vanilla¼ cup candied orange peel (like Paradise)


Orange Glaze

2 cups powdered sugar3 tablespoons orange juice1 teaspoon orange zesty candied orange peel for topping

Equipment

Standard 10- to 12-cup bundt cake pan
