Cod with Tomatoes and Olives

Ingredients

  • 1 lg cored tomato

  • 2/3 c dry white wine

  • 3/4 tsp kosher salt

  • 1 tsp fresh grated lemon zest

  • 3 tbsp extra virgin olive oil

  • 1.25 lbs cod fillet, cut into 4 pieces

  • 1/2 c chopped tomatoes

  • 2 1/2 tbsp sliced pitted Calamata olives

  • 1/3 c packed sliced fresh basil

  • Freshly ground black pepper

Preparation

Step 1


In a food processor, process the tomato. Press the tomato through a strainer into a large shallow saucepan. Add wine, salt, lemon zest, and olive oil. Place over medium heat, bring to boil, and cook for 5 minutes


Step 2


Add the cod, season with salt and pepper, reduce the heat, and cover Simmer 2-3 minutes. Turn cod over (carefully), simmer for 1-2 minutes more.

Step 3


Arrange fish in 4 soup plates.


Step 4


Add chopped tomatoes, olives, basil, and pepper to the tomato wine sauce, heat 30 seconds, spoon in equal portions over the 4 serving. Serve Immediately.
